Janet McCormick: Usher in spring with a puff pastry
My recipes are moving into spring. I’m ready, aren’t you? Ready for colorful, lighter dishes, fresh spring, fruit salads and infused waters with edible flowers, and everything that comes with spring produce. I think this week’s Sunday dinner might be due for a good old fashioned cookout. I’m going to start adjusting my diet right now so I can indulge in a couple hamburgers and hot dogs, anything that is all about spring and warmer temperatures. This happens to me every single March. We’ve switched the clocks forward, the days are getting longer, and summer is on my mind. We took a walk this evening and I could smell charcoal on the grill. Someone else had outdoor barbecue on their menu. This might be a little early and rushing the season a bit but obviously someone else is thinking just like me.
This tart has snack written all over it but I made it this morning so I ate it for breakfast. And honestly, it was nothing short of a delicious change and maybe even upgrade to my usual breakfast. Making this tart gave me instant thoughts of the toaster strudel I used to eat as a child. The cream cheese slathered on top of the puff pastry made for a perfect bed for the seasoned asparagus. In addition to the asparagus, I also added a little citrus for a bright pop of flavor. You can use either lemon or lime. I used what I already had chilling in the refrigerator. If you decide this meal is better suited for lunch, I wouldn’t blame you but breakfast has never tasted better.
Asparagus Puff Pastry
1 puff pastry
1/3 cup cream cheese
1 T. Olive oil
1/2 tsp. Powdered onion and garlic
Using 1 sheet of thawed puff pastry spread evenly the cream cheese on top. Arrange the asparagus on top. Brush with olive oil. Sprinkle with powdered onion and garlic. Bake at 400 degrees for 20 minutes or until golden brown.
Squeeze a little lime on top and serve.
