Stuffed mushrooms bring delish delights to the table

I had a surplus of mushrooms and lots of goat cheese on hand that I knew would make for the most perfect filling. I’m just going to go out and say it: These are addicting, and they’re so easy to make — just mix up some goat cheese, Parmesan and a generous amount of fresh herbs. Then stuff it all in some cremini mushrooms and bake.

Could not be easier, and you can totally stuff the mushrooms in advance and bake before serving. If you’re not saying goodbye to pasta or rice this year, a little orzo or rice will only heighten the stick-toyour-ribs factor when considering a main course for dinner. This is a perfect idea for add vegetarian meal to your weekly rotation.

I decided to end the year with a handful of rice mixed in this delicious mushroom cap. Taking out the stems of the mushrooms provides a roomy little nest for whatever stuffing you opt to bring to the table. Get excited, they are delish, fun and easy and because you can make them ahead of time. This way you are able to soak up the conversation with family members or your significant other, making quality time the priority of the night.

Prep time is fast, and when it’s time to bake them, you can pull them out of the refrigerator and get to enjoy each other. This year the resolutions on my list are fairly basic and simple. I was reintroduced to something we used to do with my family years ago. I didn’t realize how I’ve neglected the simple fun of playing games in front of the fire with a little food and refreshments.

My man turned our smart TV into a big screen of new, updated games that kinda smashed the old boardgames we used to play when we were kids. Our grown kids joined us, and I thought to myself how times have changed and that we have found the gap and destroyed it by tuning in to the new millennial apps that bring a lot of laughs in the way of party games.

I do plan to have more fun evenings like this, ss and these mushrooms would make a great appetizer.

STUFFED MUSHROOMS

2 quarts of mushrooms (crimini or baby Bellas)

1/2 cup Parmesan cheese

1/2 cup goat cheese

1/4 cup cheddar cheese

1/2 cup white rice (cooked)

Fresh herbs

Mix in a bowl, the cheese and cooked rice and herbs. Hollow out each mushroom and fill with this mixture. Place in a baking dish. Bake at 400 degrees for 20 minutes.
