Reader Recipe: Slow Cooked Chili

2 lbs. beef stew meat; cut into 1/2 inch pieces

2 - 15 1/2 oz. cams black beans; rinsed and drained

1 - 10 oz can diced tomatoes with green chilies

1 - 15 oz. can tomato sauce

1 medium onion; chopped

1 tsp. chili powder

1 tsp. salt

2 tsp. ground cumin

1 C. thick and chunky salsa

In a slow cooker combine all ingredients except the salsa; mix well. Cover and cook on high for 5 to 5 1/2 hours or on low for 8 to 9 hours. Just before serving, stir in salsa and cook for 3 minutes. Top with cheddar cheese, diced onions and sour cream.
