Reader Recipe: Rhubarb Apple Crisp

12 oz. fresh or frozen rhubarb; diced

4 medium apples; peeled cored and diced

1 C. sugar

3/4 C. flour; divided

1 tsp. vanilla

1/2 tsp. cinnamon

1 C. quick oatmeal

1 C. brown sugar

1/2 tsp. baking powder

1/4 tsp. baking soda

1/2 C. melted butter

Combine rhubarb, apples, sugar, 1/4 c. flour, vanilla and cinnamon in a medium bowl. Toss well. Place in a greased 9x13 pan. Combine remaining 1/2 C. flour, oatmeal, brown sugar, baking powder and baking soda. Add butter and mix well. Sprinkle evenly over apple/rhubarb mixture. Bake at 350 degrees for 35 minutes.
