There are three overly ripe bananas on my counter just waiting to be made into banana bread. That’s my plan for the day. I’ve been craving that for some time now and I purposely bought and did not eat these bananas for this bread. I have spent the weekend thinking about how the house will smell — that it’s been a long time, too long, since I’ve smelled sweet confections in and among the walls of this house.
No one tells you when you become an empty-nester that even cooking will carry an unwanted ingredient of loneliness. Though I give away a lot of food these days, I miss cooking for my children.
Ready for the day, I made my way into my kitchen to make the banana bread when I see huge cup full of a protein shake and my man smiling as he’s telling me to taste it. Apparently, I need to incorporate Post-it notes into my food planning that say, “I’m using these bananas for banana bread.” He had them all pureed into a protein shake. I’m smiling, as I am inwardly rolling my eyes but thankful he’s changed his lifestyle these days — more like transformed his lifestyle.
I don’t eat like I used to opting more for a low-carb cuisine, but I have not reached beyond eating natural sources of protein nor am I doing cartwheels over the introduction of kale chips, protein bars or meal replacement protein infused shakes. But I’m happy he’s changed his eating habits even if he’s stealing my banana plans and he still gets excited when I come up with a good low carb meal that is full of flavor and a lean protein he can sink his teeth into. This is one of those meals.
Thai flavors can turn a bland piece of chicken into a celebrated healthy meal. This is a versatile recipe that you can use either low-fat cream cheese or Greek yogurt. I’m swapping out pasta for romaine lettuce, but feel free to throw in vegetables or even a whole grain if eating low carb isn’t on the menu for you and your family.
This is a simple, non-fussy, go-to recipe I use a lot when I’m ready to be serious about my meal planning as I stick to my new choices I’ve laid out for a whole new lifestyle change.
Creamy Thai Chicken
2 chicken breasts, sliced thin
3 tablespoon olive oil
3 cloves garlic, chopped
3 ounces cream cheese
1 tablespoon red curry paste
1/2 cup chicken stock
1 tablespoon Sriracha sauce
3 green onions, chopped
2 heads of romaine lettuce, chopped
In a skillet, drizzle olive oil. Saute the garlic and chicken. Add in the cream cheese, paste stock, Sriracha sauce. Allow to heat through. Serve over a bed of lettuce and top with green onions.
