Beat the blues with Broccoli Cheddar Casserole
I am welcoming in February with the best broccoli cheddar casserole I have ever tasted.
I love a good casserole and word on the street is the temperatures have fallen, so much so, that I had to make a great stick-to-your-ribs cheesy casserole to counter balance the low temperatures.
This broccoli dish is every bit as delicious as you’re imagining.
And to show my support to some of you that are like me, and the cold weather causes me to hibernate with my head under the covers, I have been in the kitchen to bake us up something hearty and delicious.
Because when it’s too cold to leave your house, there’s no better use of your time than to bake.
Especially when it’s literally freezing outside, and especially after a long week.
Anyone else so happy it’s finally over? I’m not a fan of cold weather, but I do spend a bunch of time being thankful for the warm weather our winters produce in between the cold spells.
Today is a good sunny day that reminds me that just around the corner, spring awaits. And how I love the promise of sunshine, chirping birds and fluffy clouds.
I wonder if I’m the only one who cooks seasonally and sprinkles a few cheat meals in and among the healthy lifestyle I’ve created for myself when the weather turns cold.
The inner voice in me screams a song of comfort, assuring me the colder temperatures require more energy to keep warm, therefore the extra fat will easily be consumed rather than stored in extra weight.
Well, true in that is the conversation I have with myself to justify this delicious meal. Moderation is my song. I loved serving this to my family. They enjoyed it as well.

BROCCOLI CHEDDAR CASSEROLE
1 pkg. frozen chopped broccoli
2 cups heavy whipping cream
1/2cup Parmesan cheese
1 1/2 cups cheddar cheese
1 cup panko bread crumbs
1/2 tsp. garlic powder
In a large sauce pan bring the heavy whipping cream to a boil. Add in the Parmesan cheese, garlic and stir.
Now add in the cheddar cheese. Stir until silky.
In a casserole dish place the broccoli. Pour in the cheese mixture. Top with Vz cup cheddar cheese. Top with panko bread crumbs.
Bake in a 400-degree oven until bubbly and the top browns.
