Slices, and a Whole Lot More
FITCHBURG -- Doughboys Pizza on Main, the new restaurant at the Intermodal station, could be the first under a brand that could extend to other cities across the state.
“We’re getting into the pizza game,” said owner Shane Egan.
Fitchburg is the place to start because it seemed like a good place for business, he said, and because of the restaurant’s location near Fitchburg State University.
Doughboys will offer craft pizza with toppings like potato, pulled pork and fig jam alongside pizzas with more traditional toppings like meat or vegetables. There will also be sandwiches and appetizers.
“We wanted to keep the menu small and the quality good,” he said.
All of the food will be made with high-quality ingredients, Egan said.
The Doughboys staff looked at what the previous restaurant, Super Fans Deli and Pizzeria, had on the menu and what items were popular to craft its own menu, he said.
The restaurant also plans to sell beer once it receives a liquor license.
Egan has worked in food service by developing menus for the British Beer Company, where he is director of operations.
For its opening week, Doughboys will host a Super Bowl Challenge.
People who like the restaurant’s Facebook page and share the post about the contest will have their name entered into a raffle to win two large pizzas, two dozen wings, two large bags of chips, and two 2-liter Cokes -- perfect for a game-watch party, Egan said.
“It was a a good way to get our name out there,” he said.
The winner will be announced Friday before Sunday’s game between the Patriots and the Los Angeles Rams.
When customers come to Doughboys, they can expect to see an updated interior with new seating and a counter at the end of the dining area that faces the entrance.
Gray paint and diamond plate -- like the kind found in a garage -- accents the walls and pays tribute to Fitchburg’s heritage.
“It’s an industrial city, so we wanted to go for an industrial look,” Egan said.
He envisions the restaurant as a comfortable place for people to hang out or work. There will also be a patio for when the weather is warmer.
Live music or performances could something else to consider, he said.
