SMALL DAIRIES FIGHT BACK
FAIRFIELD — Organic dairy farmers say they could go out of business in part because the U.S. Department of Agriculture has allowed milk to be labeled organic even if cows are not allowed outside and are fed only grains rather than grass. The rules have led to larger operations that can operate more cheaply, prompting major buyers to cancel contracts with small dairies. Faced with the challenge, some small dairies are banding together and planning to label their milk more specifically, so consumers are aware their cows roam outside and eat grass. By David Pitt.
