Janet McCormick: Chicken Cheese Nachos worthy of a cheat meal

My kitchen is my sanctuary, and it is there that I speak my most fluent love language: nurturing through food -really good food.

With winter in full effect over much of the country, this meal packs a hearty punch - yet it also covers the snack attack that might hit you right before dinner. This unintentionally became our dinner the other day and wow, did it take me by surprise.

My wild and crazy brain is notorious for starting new things, loving them for awhile and then flitting off to find new ideas. I took a small vacation, well, it really wasn’t small. I took a glorious vacation and we decided to abandon our commitments - i.e. work, healthy eating and exercise - on or about the fourth day in. I never want to come off as a PollyAnna who writes about one thing, yet does something completely contrary to my goals and dreams.

My hopes and dreams are me, at my best. They are not my always, nor my everyday thinking -and in fact, I might contradict my own words nearly every time I have a bad hour where I feel the tightness of my pants around my waist or I notice at first light when I look in the mirror the wrinkles growing deeper and the puffy appearance of my cheeks for absolutely no reason like maybe I didn’t rest well or I ate a salty pretzel right before bed.

The truth is, I fall short of perfection; though I am a hardcore idealist, I have abandoned goals when I am at the intersection of comfort and hard work. Thank God, tomorrow is another day to be new and ready to get back on the path.

Writing this today, I am in a fairly peaceful state of mind having coffee and look, he brought me a fresh cup of coffee. I am smiling to myself as I tell you, it’s OK to indulge in the road that leads to comfort. This dish is my path of least resistance. A lower-carb lifestyle has directed my choices causing me to give up things like chips and sugary snacks. But today, I war with nothing except the decision of what I’m going to eat first: the cake or the nachos. Chicken cheese nachos, the snack that became my dinner.

Chicken Cheese Nachos

12 flat tortilla chips1 cup shredded chicken breasts1 cup cheddar cheeseSour creamJarred salsaJalapeos, sliced

On a plate arrange the tortilla chips. Spread the chicken onto each chip evenly. Top with cheddar cheese. In a heated oven with the broiler on high place the plate on the wrack and melt the cheese. Serve with sour cream and salsa. Toss in a few jalapeos.
